Allow 3- 4 dove breasts per person.  Make a seasoning mixture of 3 parts salt to 1 part Tony’s seasoning. 
Rub the breasts until they look over-seasoned.  Place the breasts (bones down) in a baking dish and lay a strip of bacon over each breast. 
Add a small amount of water to the bottom of the dish and cover tightly.  Place the dish in a preheated 350-degree oven and cook 2 – 3 hours until the birds are tender.  Add water throughout to keep moisture inside the baking dish. 

When the doves are tender, remove the lid and allow the birds to brown. The seasoning mix will create a nice crusty, brown coating.  Remove the doves from the baking dish and set aside. 

Use the pan drippings and flour to make a gravy that can be poured over the birds or served on the side. 

The doves are usually served with red beans and rice but potatoes added to the baking dish also work well.
