Grilled Goose/Duck Breasts by Wayne Weilnau

Four goose breasts or eight duck breasts

Cookwell & Company All Natural Pecos 83 marinade or Bock and Brown Sugar marinade (you can buy the marinades at HEB, The Strawberry Patch in Salado, or http://cookwell.elsstore.com/view/category/2885-marinades/).

Remove all the fat from the breasts and place in a Ziploc bag.  Add enough marinade to cover the breasts (work it around a bit) and refrigerate for 24 hours.  Grill the breasts until either rare or medium rare (don’t cook them more done than medium rare as they will dry out and lose their flavor).  Serves four.
