ByIngredients:
1 pound fish fillets
2 tablespoons grated Parmesan cheese
3 tablespoons corn meal
1/2 teaspoon pepper
1/4 teaspoon onion salt
1/2 teaspoon paprika
1 tablespoon soft margarine
Cut fish into serving size portions or “fingers”. Rinse fish and pat dry. Combine cheese, cornmeal and seasonings in a flat pan. Coat fish with the mixture and place the fish on a prepared pan. Drizzle margarine over fish. Bake about 10 minutes per inch of fish thickness at 350 degrees, or until solid white throughout. Do not overcook. Serves 4.
