Venison Meat Loaf with Mushrooms contributed by Randy Rowley
ByIngredients:
3 lbs. ground venison
1 lb. ground pork sausage
1 can cream of mushroom soup, undiluted
1 can button mushrooms, sliced
1 onion, chopped fine
1 pinch each, parsley, thyme, basil
2 cup seasoned bread crumbs
1 egg, beaten
1 can beef broth or bouillon
1 package mushroom gravy mix
Pepper and salt to taste
Mix the packaged gravy mix and beef broth in a bowl and set aside. Combine all other ingredients, mix thoroughly by hand, and shape into a loaf. Put in roasting pan or Dutch oven. Pour gravy mixture over the top. Cover and cook for 45 minutes in a preheated 325 degree oven. Uncover and continue to cook another 30 minutes.
